What version of FSLogix is in use?  The latest version of the release notes makes mention:

"The OfficeFileCache folder located at %LOCALAPPDATA%\Microsoft\Office\16.0\OfficeFileCache is now machine specific and encrypted so we exclude it from FSLogix containers. Office files located outside this"

Is it possible office was updated and FSLogix hasn't been and this machine specific cache results in your problem?  I'm currently validating that an adjustment to the redirections.xml to exclude this path has similar behavior as it's difficult to get an FSLogix upgrade out quickly in my environment.

Using an older FSLogix build but going to try going to the newest to see if that improves things..

<@ULXAFK8BU>  Did this work?  we have OfficeFileCache redirected to the OFDC,  thinking of disabling this policy, so it goes back to the profile, then excluding it in redirections.xml.   Again, getting an FSLogix 2201 deployed fills me with dread at the moment.
