Is there any documentation that lists which policies are applied when selecting “Secure Defaults” during VDA installation? I understand this mainly affects data transfer virtual channels, but I’m looking for the exact corresponding settings in classic Studio policies.

I assume you have seen this list but im not sre how all the settings are defined • Secure Default Settings: This option changes the default setting for various features from enabled to disabled for a more secure out-of-box configuration. The relevant features are: client drive redirection, special folder redirection, drag and drop, client TWAIN device redirection, Client USB Plug and Play device redirection, client printer redirection, client clipboard redirection, and client microphone redirection.

yeah, i think that was mainly so that it would match up similar to what others were doing like host pool defaults now for AVD/Cloud PC where they secure various virtual channels right from the get go if no other policy setting or configuration profile in place to take priority over it. I cant' recall right now if each setting is listed somewhere...
