I'm a bit unclear on what I need data-wise for a fresh production app. Do I run the seeds? As that also creates the default admin user i'm not sure.

I don’t know all the details, but there’s definite data you’ll need in the DB. The seeds will create some “background info”, like countries/states/currencies. You’ll need a default “Zone”, a bunch of places your store operates, as well as a default store too. For a normal ecommerce site you’ll need to create some shipping options too.

The seeds are what you need. The admin credentials can be controlled via environment variables, or you can just immediately remove the user and set up your own. Most stores augment the seeds as part of development ahead of launch, often adding things like the launch products and payment method and shipping configurations.
