What are good specs for a ec2 machine to run Coder OSS in ?

Depends on your use case - I use t2.xlarge (4 cores 16gb ram) and it works well for my web projects and minor changes to Coder

I believe this server should always stay on right? Only the images and containers that this machine deploys will be subject to the automatic shutdown of resources by the scheduler and this machine running the CoderOSS codebase will stay on forever?

Yep the server should always be running, but workspaces can auto shutdown to save on compute cost!

You can use a tiny instance type if you're spinning up external compute (e.g. another VM as a workspace).

<@275847521350320130> I asked this question a few weeks ago as well. Since I needed preview links immediately I decided to setup up my own links using cloudflared (Argo Tunnels). Check out the example I just added on github if you are interested. The example uses cloudflare advanced certs which is a paid service but you can easily change the configs to not use nested wildcards and that would be supported by CF for free. To use the free route you will need to remove the resouce that creates a new cert in CF (cloudflare_certificate_pack).
