I'd like to swap the customgen (with cobblestone with bedrock beneath) for the regular cobblegen, so that I don't have to place bedrock beneath the cobblegen to get the ore blocks. I'm a little unsure about exactly how I need to edit the file to make this happen, and would welcome any help. Thank you for your time!

You just need to move content inside

"minecraft:bedrock": [

into

"cobbleGen": [

, the content that look something like this:
