You say "Making sure that “Restrict each user to a single session” is set", that would be your issue then I guess. With that configured, your resulting configuration is the opposite of what you desire to have.

Could use tagging
• Tags: Desktop1, Desktop2, Desktop3...
• Desktop defined on delivery Group: Desktop1 -> Restricted to Tag1, Desktop2 -> Restricted to Tag2, Desktop3 -> restricted to Tag3 etc
• Assign tags to sub pools of VM's in your DG

That require users to press five different desktops, right? Or am I missing something.
It may be okay, but the optimal scenario would be to press the same published desktop five times and then start five desktops.
