@James Kindon that sizing MS doc was from US install I have seen it before on support but it looks to have had a lot of work by a exchange product team, the calculation we used for the big customer in UK was SMB Share should support 5 IOPs per user in random for normal usage and 250 IOPs during first time cache creation. And this worked well for the storage team
