Circling back on the odd MAC client issues we were seeing when we didn't have an external gateway deployed for internal only sites, and GACS was failing. From Citrix support when I used the private hotfix: "I confirmed that the fix will be in the Citrix Workspace app Mac 2611 release. In your particular case, the Gateway was not configured in the environment and the internal beacon was unreachable. We have added a condition: if the Gateway is not configured, treat the customer as being on the internal network, matching the Windows implementation."
