Yes, I have seen this behaviour. It was happening to me quite a lot on a solution I've been deploying where I have at least two USB printers per user that I'm using VMware Integrated Printing to passthrough into the session and I noticed that if a user logged in, we could jump to the printer settings and watch the printers getting cre ated/added just as you experienced. After a lot of testing and frustration I ended up writing a C# console application that was launched by DEM. The C# app has a command line argument for Printer Name to make the Default Printer and delay on it to cater for the length of time it takes for the printers to appear. It averaged about 13 seconds for the printers to get created and presentable to the session during the logon phase which was slow also because of antivirus. I didn't see the same issue with DEM mapping network printers though, it was just USB based printers. I also had to make sure that Windows (LegacyDefaultPrinterMode) was Enabled on both the Session and the Win10 LTSC based clients as this mucked about with the Default printer as well.
