The problem is the virtual channel does more than just optimize it - it also deals with hardware detection, call quality, etc. Running virtual sessions in non-optimized mode is bad. But luckily the new Teams is not far off so there will be feature parity between desktop and VDI Teams so you won't need to worry about it so much, also not so many upgrades and changes
We have virtual instances with 2 GPUs, 24 CPUs and 64GB RAM but running non-optimized Teams on them was very poor experience-wise (a lot of noise on calls, glitchy hardware detection, etc.)
