for 2) I can see that Twill has some special case code for a publish_start_date column which formats the date nicely. But again, not sure if I can do it without customizing vue components (which I don't want to do)

or a custom accessor but then that might mess up sorting which you'd need to configure as well

did you create the relationship we discussed earlier? if there's nothing in fileables for that file, user and role, it won't show in the form
