Okay, that's what I did yesterday but the problem is the long delay we tried yesterday and there is a big latency.

It depends how your DNS are configured, some DNS records have a TTL of 2 days, which would explain the latency. I usually first change the TTL, wait 2 days, and do the above. But if you’ve changed it already then it’s no use, you’ll need to wait for the new DNS to propagate.

The TTL is default of OVH so you know how i can do step by step for an other subdomain ?

Well, it seems to be at 0 so I’m not sure why there would be such latency.
