Hi all, does anyone have an understanding of the Eng design behind how sellers can edit their products without changing existing orders?

What kind of edits do you want to make that are going to impact existing orders?

Eg if I buy a blue shirt for $10 and the seller updates that product to yellow shirt $8. How does solidus design to honor the blue shirt $10

The price is selected when you add to cart, so that won't change.

As for the product becoming a different product, just don't do that? If it's a different product, create a new product/variant for it.

Why would you ever edit a variant to turn it from a blue shirt to a yellow shirt?

Ya that's true. I guess asking more in the case of dispute If shipped product is different from listed product. So currently we don't support deep copy the product variant per order?

Or if sellers accidentally delete the product variant.

No, there's no deep copy there, but variants are soft-deleted when you delete them, so as to avoid issues with deletion of sold variants.
