I noticed our LLM Providers section doesn't have instructions for.... Anthropic

Maybe because it's just the usual and works

We have generally added information about providers where extra details are necessary or it doesn't really work

There are far too many providers to add them all, that wasn't the goal

Granted, by that reasoning OpenAI is strange to be found there, but I think maybe this is useful : <https://docs.openhands.dev/openhands/usage/llms/openai-llms#using-openai-compatible-endpoints>

I think we should add anthropic, given that people use it frequently though
