This is how I do similar with cpp-library plugin

tasks.whenTaskAdded {task ->
   if(task.name.contains("compileDebugCpp")) {
        task.enabled = false
    }
}

I don't think there's a task though. I think they just have a

dependencies

block to add a dependency automatically. It's a convention plugin

don't know.

You could for example use the big hammer method and just exclude it on the configuration like

configurations.annotationProcessor {
    exclude(...)
}
