i rebuilt my cluster using spec.image streamnative/sn-platform:3.1.2.1 for zookeeper, bookie, broker, proxy and the cluster is not coming up now. it seems the operator has not been qualified on pulsar 3.x yet?

You can update the spec.image field to use streamnative/sn-platform-slim 3.x version and it should work. i have deployed the 3.1.0.5 version before w/o issues.

also i noticed that if i remove the spec.image from PulsarBroker, that it defaults to apachepulsar/pulsar:latest. which leads me to wonder what is the difference between the apachepulsar/pulsar and streamnative/sn-platform-slim images? can i just as well use the official apachepulsar/pulsar image?

I am researching that now, but it comes down to what software is bundled in the image, with the SN image being “pared down” to a bare minimum.

The pulsar-operators repo is private and owned by StreamNative because they are not open-source. They are available for use under a community license.
