I’ve read about using CookieInsert, but thought it would be a good idea to see what others are doing or if anyone has experienced this before. 🤔

I have used cookieinsert as primary and sourceip as secondary in some cases and sourceip only in others. If you have shared IPs connecting, you definitely want cookieinsert.
I don't see why you are setting a netmask, but I would remove it:
netmask
IPv4 subnet mask to apply to the destination IP address or source IP address when the load balancing method is DESTINATIONIPHASH or SOURCEIPHASH.

Hi Seth, one thing I’ve notice is there’s no way of removing the netmask, it appears by default as the broadcast address for all the zeros. Most documentation and guides I’ve read include it too.

What is your command lines around the vserver? There is a wizard I think for setting up a storefront lb vserver. Here is an example of a http one I worked on in the past: add lb vserver storefront_lbvip HTTP #.#.#.# 80 -persistenceType COOKIEINSERT -timeout 0 -persistenceBackup SOURCEIP -cltTimeout 180
