Hi Ray, I created an entire MCS catalog in PowerShell (https://stevenlemonier.fr/how-to-create-an-mcs-catalog-in-powershell/), the key command is the New-ProvScheme you'll have to add then to your existing MCS catalog. Maybe, you can even edit the existing ProvScheme to set the IdentityPoolUid to your new Datastore (https://developer-docs.citrix.com/projects/citrix-virtual-apps-desktops-sdk/en/2009/MachineCreation/Set-ProvScheme/). Would be easier but never gave it a try.
