You can set Store with the SOFTWARE\Policies\Citrix\Receiver\Sites\STORE1 registry key

Which works, but adds it in as a different store rather than editing any existing one. Which is not a bad thing, but I was hoping to head off the inevitable help desk calls when a user spots two stores in the menu.
