As most of our clients are using O365, we are tending to use Microsoft 365 Apps with shared activation. With 2021 you are only going to get 3 years of support with O365, then upgrade time again.

Agree. In 3 years it'll be someone elses problem, lol we've already deployed 2021ltsc to desktops, so i'd like to stick with the same thing on the virutal side.

Why would this be any different to a Microsoft 365 apps install? The binaries and install process are the same (other than version numbers).

I agree, but wasn't sure about the LTSC side of things. We are looking to use LTSC in the OT (Process Control, Mine Sites, etc) side where they still need Excel, Word and PowerPoint, as this has no connectivity to the Internet.

@Jeremy Saunders Does your statement of "no internet connectivity" mean there is also no access to the KMS server on prem?

Sorry, I realise my wording was not clear. Yes, we have KMS in OT and is what we activate Windows and Office non-365 from. But users can't login to Office 365 from OT as there is no Internet connectivity, hence why we are sticking with LTSC. I just don't hear much of version 2021 being deployed in Citrix anymore, so interested in this thread. Apologies for making it confusing.
