I have a board with an ESP32-C6 on my table, but haven't yet tried to make it work. It might be easy to get working, but for now I would pick another board, that has already been tested.

Yes. The C3 is supported.
It's a tuned down version of the normal ESP32.
If you just want to have a nice ESP32 board, then I recommend an ESP32 WROOM board. If you want to have one of the best ESP32 boards, then pick an ESP32S3 board.
But the C3 works fine too.

ESP32 C3 has both wifi and BLE.

All ESP32 boards do.
But contrary to the ESP32 (wroom, wrover...), the C3 only has one core, and a bit less memory.
If you want to use BLE, I actually recommend a stronger board. The ESP implementation of BLE uses quite a lot of memory.
It works with the C3, but you often end up fighting for memory.
Actually, the S2 doesn't have BLE.
For example (memory with BLE...): it can be challenging to do a WiFi TLS connection and BLE at the same time.

Actually, for the second one you probably want to have one with internal antenna. So not the VIE variant, but the VE one. (I think that's the difference).

Could you recommend a colourful display to match my TI Linux board? Buyers may want extra colourful display for extra features. It is called business. 😏

As Erik wrote, any display that is based on an SSD1306 with SPI interface should work.
But connecting it to your board would be difficult.
Since you are buying a new board anyway, I would consider buying one that has a screen already attached.

I just tried to run /opt/toit-sdk/bin/toit.pkg list . It showed many packages! 😆

There in Toitware already are many plugins for my favourite sensors! I need one more ublox chip and my TI long range wireless router hardware are almost ready!👍 😆
I probably has one of these ILI9341, ILI9488.
This one is great for experiment. It even comes with an enclosure. 👍
Is there a way to run Toit container under Linux board? How do we re-spawn critical Toit container/process?

Depends a bit on your setup. Typically, on desktops, we just generate an executable
toit.compile -o ...
and then treat it like any other executable that needs to run continuously. We have plans to implement Artemis on top of Linux, where Artemis handles the individual containers itself, but that's by putting a layer on top of Linux.
