Is there a way to find SST created resources across different regions? I am looking to spin down some resources occurring cost that I don’t believe I am using anymore.

You could track down the costs through cost explorer. I use vantage.sh which supports multi accounts, for free, easy setup. If your bill is less that $2500/month it's free forever. Screenshot so you know what to expect if you decide to try it
