For emails, these are key metrics:
Deliverability
Number of opens (not the same as open rate. Does somebody open the email multiple times, which means the emails are getting forwarded)
Reply rate
A/B testing - have at least 2-3 variants always live
Number of new contacts added to sequence every day
Bounce rate - below 1% is optimal

We use Salesloft internally. Gives us the flexibility to track activity metrics per day by SDR like emails sent, dials, call logged, connected calls, voice mails, LinkedIn touches all the way to opps created, meetings booked & success rate
