What’s a good thunderbolt 3 dock that you know to work well with MBPs?

If you don’t mind a powered, on-desk dock — I have been using the Dell D6000 for a year now and it works well with my MBP16. I have 2 HD external monitors along with a host of other stuff that I run off it. You’ll need to use DisplayLink though to drive the monitors. I think it supports upto 1 x 5K monitor OR 3 x 4K monitors.
