One of our team members is leaving us and he has always been remote. What sort of remote farewells can we do? Any thoughts or ideas?

In the past, we have all decided to get something - like maybe some cake or pastries or coffee. (Not alcohol - but that could be an option). This is on the last meeting with the person. And if your team is small, everyone can go around and share a couple of things they admire about the person and some interesting incidents (if any) involving that person.
