step before any stg/prod deployment, then notify pact about the deployment, so it knows which version is active. Just wanted to clarify whether this would be recorded as a *deployment (*environments entry) or release (production environments entry)?

Have you read https://docs.pact.io/pact_broker/recording_deployments_and_releases? TL;DR - you probably want deployment, but there are some cases (e.g. mobile consumers) that you want to record a release.
