Statefulsets are so restrictive on what you can change, and they're tightly coupled to the PVC, so it can be rather annoying to deal with long-term. With a deployment, it's easier to bring your own PVC if desired, and also to make changes to them separately (like resizing the volume and such)

I'll open an issue since this will be a potentially breaking change, or a very annoying one, since it will require maintaining both.
