Any change creates a new version of a notebook, so you can roll back to any point you want. Just note the version number of the "commit" and you can jump to it via the history pane.

I often fork notebooks and put a [3] style version indicator in the title so I can jump between the forks more easily (each one is just a specific version snapshot). It’s been discussed before to have an idea of “starred” revisions you can easily jump between but I don’t know if there’s been any thought about it recently
