When I set it to false, LiveKit starts correctly, but the test then throws up an issue regarding UDP:

I have added a bunch of google stun servers that are known good to the config file, just in case the default one was having issues.
No change.

This is the relevant section of the config:

do you have a public IP on the machine you are trying to run this on? another thing to be sure is STUN traffic is allowed outbound

The machine is running behind a NAT but has a public IP. You are right, I should check if I can get STUN traffic out.
