As far as I can tell, the `name` is being added to the access token as expected when a new participant joins a session.

Also, the `name` shows up in the pre-built react component from LiveKit

But when I look at that session in the cloud analytics dashboard, it sometimes says `(none)` which is causing some issues with analytics tools we've built

I first started seeing this on 9/5 if that's helpful
