I have a lot of evidence pointing to the cause - when a video track starts or stops, the sfu inserts a blank frame to ensure smooth transitions to/from no data (many players will just freeze the last frame until the next one comes in). There seem to be timestamping issues with these frames
Still working on a fix though
Fixed here - https://github.com/livekit/server-sdk-go/pull/291. It was an issue where gstreamer was waiting to process packets which were (incorrectly) timestamped hours into the future

Raja also put in some work on the SFU side to fix the source of the incorrect timestamps, my fix was more of a backup. Glad itโ€™s finally working though!
