Hmmm so what we do is one publishes shared screen and microphone and the others only publish microphone. Is there anyway to change the recording canvas?

I think you are probably using the default output settings.. which records a landscape video. please see docs here on passing in the right encoding preset. you'd want one of these that start with

PORTRAIT_
