Hi, is there a way to unassign money assigned to a credit card from a previous month? When I assign everything at once, it includes credit cards, is there a way to exclude credit cards (I’m using the iPhone App).

To unassign money you can go to the previous month and subtract the amount that was improperly assigned

I use android but I assume it's the same thing. You hit the minus sign on the calculator and enter the amount you want subtracted

And I’m assuming we never want to assign money to a credit card?

In general, no. You'd want to assign money to the appropriate category and YNAB automatically assigns it to the CC.
The only time I've experienced needing to assign directly to the card is where you got a refund for a category from a previous month onto the card. In that scenario I've seen that YNAB requires you to assign money to the card (though I don't fully understand why - I have a thread about it somewhere).

I don't believe so. But maybe email YNAB team and they'll consider adding the feature

This is just a theory but I assume that it's only assigning money directly to the CC because you have an uncategorized transaction. I.e. if you first categorize all transaction and then do the auto-assign it would just assign the money to the category that needs it, which in turn would automatically assign the money to the CC. But I have no idea if I'm correct on that, I don't usually use auto assign.
