When is commandbox 6.1.0 expected to be released in a docker image?

I am not sure on when it will be released but in the meantime, if you use

ortussolutions/commandbox:snapshot

that should always have the latest version, which I believe is the release candidate for 6.1.0. Assuming no other issues, I would think the RC version will be pretty close to the final version, if not the same. I am tagging @bdw429s to see if he has any updates on the release availability.
