According to the Adobe documentation: “ColdFusion sets Cookie client variables to expire after approximately ten years.” Is there anyway to control that expiration at the server level, not the app level?

you can set the session cookie timeouts in CF administrator, if you set them to -1 for example it turns it into a browser session cookie. You can also add
this.sessioncookie.timeout = -1;
in your Application.cfc
