We have testing tenant and client tenants configured with SSO and some of them need the SSO connection to be removed (we are billed for SSO connection usage). However, when attempting to remove either a SAML or OIDC configuration, the tenant settings will not save.
This issue is consistent across Projects and multiple Tenants

@Kenneth Knoll Do you have "Enforce SSO" enabled by any chance?

Took a look into our backend, and see that there is an issue with the employeeId custom attribute.
To resolve this, either create the employeeId attribute or remove it from the SAML configuration.
You can do this by navigating to Tenant → SAML → Auth Settings and removing the employee ID mapping.
The project setting can’t be saved because the custom attribute doesn’t currently exist.

A gentleman and a scholar...many thanks @Nick Rodriguez. Made the change and works swimmingly.
We did revise and change both of those attributes in our system some time back which left the gap.
Thanks for the quick check and resolution!
