Trying to deploy airbyte into prod using eks and getting stuck with this issue https://github.com/airbytehq/airbyte/issues/18016 is there a explanation on how to setup S3 as log storage

I believe this is a known issue and is currently being worked, there's no workaround at this time unfortunately!
