since the airbyte hosted solution (Cloud pricing tier) is still in progress, would someone be able to give an idea of the most common cloud people are using to deploy production airbyte?

Airbyte runs on top of docker containers, if you're going to have 500 connections you need to have a large instance because you'll have multiple docker containers running in parallel. But it's not easy to give you a correct instance size without knowing how much connectors you're going to use.
