Idk if that's the right channel for a question, but will it ever be possible to create new projects / organizations when you use supabase self-hosted?

You only get one organisation on self hosted, well from the dashboard that is. You can probably add more programmatically.

I saw a message that it won't be in studio, but will there be a way in the future?

There's only 1 set of API keys and 1 database, so there's no reliable way to separate users on a per-project basis
