hi, is there any way to add multiple file extensions to contentType using from.upload? - seems like the default is image/png - but we want to be able to upload .gif, .jpg and so on

Not really sure what your issue is. There is no default type that I know of. I have uploaded pdf, gif, png, jpg no issues. contentType is mainly used if you are uploading an arraybuffer where the filetype is not know, and you should be able to set as needed.
What environment are you doing the upload in?
