I mean, I know it's open-source so it should be possible (btw, a tutorial would be much appreciated), but is it possible to get the same front-end interface we have, seeing the tables etc?

You can self host the stack on your own VPS, there is some information in the documentation here https://supabase.com/docs/guides/hosting/overview

You get a version of the front-end interface that yes will show the tables

Sorry would love to keep using the supabase cloud to support the team, but really can't afford when scaling

I may tip 20$ per month maybe to compensate, is that possible?
